Tuna Pindang Kuning
Pindang kuning or yellow pindang is a traditional Indonesian dish. There are various recipes for pindang, but my favorite is yellow pindang with tuna fish. This recipe is from my mother and for me she is the best cook for this dish. Eat yellow pindang with rice and shrimp paste chili sauce, definitely can't resist to eat more and more.
-1 kg tuna fish
-4 tbsp cooking oil
-400 ml water
-1 cm galangal, press to release the flavour
-2 stalks lemongrass (white part only), press to release the flavour
-2 tbsp tamarind juice from 2 tbsp water and tamarind
-salt and sugar to taste
Spice Paste :
-5 cloves garlic
-2 cloves onion
-2 cm ginger
-4 cm turmeric
Pound all ingredients for spice paste with mortar and pestle or grind them in food processor. Heat oil and fry the spice paste until fragrant, add the tamarind juice, galangal, lemongrass and bring to boil. Then add tuna fish, stir awhile and add water, salt and sugar. Simmer on low heat untill the fish cooked. Serve hot with fried onion.
