Bingke is originally from Pontianak, West Borneo. The original bingke was made from potato as main ingredient, but now there are so many variant for bingke. This time I want to make from sweet potato, because I love the sweetness from the sweet potato. The cake itself has a rich sweet potato flavor, soft, creamy and it's super easy to make.
5 eggs300 g sweet potato, boiled and mashed
50 g plain flour
200 g condensed milk
100 g sugar
100 ml air
1 tsp salt
Put eggs and sugar into a bowl and mix through to combine. Add sweet potato, plain flour, condensed milk, water and salt mix until combined well. Bake for about 30-40 minutes in medium heat.
