Coconut Basil Seeds Agar with Mango and Cinnamon

I'm so exited about December. It's fruits season! Some of my mother's fruits ready to harvest. After harvested rambutans last week, now we harvesting mangoes. Fresh mangoes and hot weather, I'm thinking about cold dessert. Since I lived in a tropics area, so we only have a dry and wet season, although December is a wet season means rain a lot, but still when it doesn't rain, the weather hot enough. So cold dessert must be nice.
The most easiest dessert for me is work with agar agar. Agar agar is made from seaweed and I think it's good for vegetarian as a substitute for gelatin, although it doesn't give the same texture, agar agar texture more firmer than gelatin. This agar recipe is very simple, just boil together all ingredients and that's it, done! I add some basil seeds in this recipe not just to add texture, but basil seeds have some health benefits too. Easy to make, have health benefits, and mangoes mix with cinnamon, love those flavours.

With Mango and Cinnamon
Serves 8-10
Ingredients :
900 ml coconut milk
7 g or 1 sachet agar agar powder
3 tbsp basil seeds
2 tbsp sugar
3 tbsp condensed milk
Fruit topping :
2 ripe mangoes, diced
1 cup water
1/2 cup sugar
2 cm cinnamon, if you like strong taste of cinnamon, add more
Instructions :
Put basil seeds in a bowl, add water and let it soak for about 10 minutes.
Heat coconut milk, agar agar and sugar , stirring constantly and bring to boil. Add condensed milk, keep stirring while adding it until mix in well. Remove from the heat.
Strain the basil seeds from the water, put in the jar, bowl or whatever you like and then pour the agar. Let it cool until reach room temperature and refrigerate.
For fruit topping :
Heat water, sugar  and cinnamon in a saucepan, simmered until sugar dissolved. Toss mangoes into saucepan, stir just for a while then remove from heat. Serve over the agar.
