Lapis Surabaya / Surabaya Layer Cake With Strawberry Jam


Surabaya is a capital city of East Java, but this cake is very famous and familiar in all over Indonesia. I guess most Indonesian knew that when you refer to lapis surabaya, the triple layer cake with chocolate layer in the middle will appear in their mind. This cake is usually served for feast day.
The authentic lapis surabaya recipe is used 30 eggs and egg yolks only. Quite heavy maybe but of course super moist and delicious. My sister loves cakes so much but want a light and economical version for this cake with much more less eggs. The result this recipe only used 7 whole eggs and the cake still moist enough. I like this light version though, suitable for afternoon tea.

LAPIS SURABAYA / SURABAYA LAYER CAKEWith Strawberry Jam
serves 10-12
Ingredients:7 large eggs, separate egg yolks and egg whites
100 g all purpose flour
200 g powdered sugar
100 g condensed milk
150 g butter, melted
20 g chocolate powder
1 tsp vanilla extract

Instructions:
In a large bowl, beat egg yolks and 100 g powdered sugar until smooth. Add flour, condensed milk, melted butter and vanilla extract, combine well.
In another bowl, whisk egg whites, add the other 100 g powdered sugar gradually, whisk again until stiff peaks form.
Pour the egg whites batter into the large bowl, combine well.
Divide evenly the batter to make 3 layers. Add chocolate powdered to 1 part of the batter.
Pour each batter to the baking pans size 10 x 30 cm. Bake in medium heat (180 C) for 20 minutes.
Let the cakes cool in their pans before turn them out.
Spread the strawberry jam in each layer and stacking the cake with the chocolate part in the middle.
