Indonesian Purple Sweet Potato Dessert ; Bubur Biji Salak


Bubur biji salak is Indonesian traditional dessert. Most of Indonesian desserts are made from coconut milk and palm sugar. This dessert is very famous, in Sumatra people usually called it bubur biji Ketapang and some called it bubur candil. The most common main ingredient for this dessert is used yellow sweet potatoes, but this time I tried purple sweet potato.

This dessert is sweet, but you can adjust the sweetness to your taste buds. The coconut milk sauce is savory to balance the original sweetness from the purple sweet  potato and the palm sugar sauce. I like to eat this dessert warm but if you like cold you can add ice cubes into your bowl. The coconut milk sauce will taste better if you use fresh coconut to make the coconut milk. This dessert is so easy to make yet delicious.





Ingredients :

A. 500 g purple sweet potato
     100 g tapioca flour
     a pinch of salt

B.  Coconut milk sauce
      200 ml thick coconut milk
      100 ml water
      a pinch of salt

C.  200 g gula jawa/ palm sugar
      100 ml water
      1 pandan leaf


Instructions :

A.  Boil the purple sweet potato until soft. Peel the skin and mash the potato with spoon or fork. Add tapioca flour and salt until combine well. Shape the dough into the small shape that you like. Pour the small shape sweet potato into boiling water until rise to the surface and lift with a sieve. let it cool and set aside.
B. Heat the thick coconut milk and water into a saucepan, add a pinch of salt. simmer and stir at low heat until boiling. Remove from the heat. 
C. Boil the water, add palm sugar and pandan leaf, cook until palm sugar dissolves with water.

Serving :

Pour coconut milk sauce to a bowl, add the sweet potato and last pour the palm sugar to the bowl. If like you cold dessert, you can add ice cube to the bowl.
